When hosting your wedding reception with us:



  • Catering Peoria offers all-day room access for set-up and preparation of special events. If you need more time, we also allow clients to come in days before so you are worry free for your special day (depending on prior scheduled events).

  • Cake cutting and serving is complimentary for you on your special day.

  • A complimentary glass of champagne for all guests 21 years and older is included with your dinner.

  • The team has worked with a number of reputable photographers, bakers, and florists. If you are in need of recommendations, our team will assist you so that you find a vendor that suits you perfectly.

  • Catering Peoria does off-site catering. If you find your dream location elsewhere, Catering Peoria will bring the services and food to you.

  • Room fees are discounted on Friday evenings.

  • A hotel shuttle service is offered by a number of hotels around the area.

Joe Slyman, Business Manager
Joe Slyman brings business savvy and knowledge of the food service industry to the Catering Peoria team. Joe has been cooking up ideas in Peoria since 1983 when he and his brother opened Adams Street Café. He is an integral part of the team, lending a hand in business development, creative solutions, and event details.

Karen Wahl, Banquet & Catering Director/Proprietor
Karen Wahl is renowned in the Peoria area for her panache for catering and personal customer service. Her unquestionable skills have been shaped from working at some of the areas greatest catering venues, including the River Station and Kickapoo Creek Winery for many years. Karen is showcasing those talents these days with her team at Catering Peoria. In fact, the majority of the team has been working together for more than 15 years, which is why they are such a well-oiled event planning machine.

Stephanie Leafgreen, Banquet & Catering Manager
Stephanie Leafgreen is the first face you see when stepping foot into Coyote Creek. Stephanie lives and breathes detail so that you don’t have to worry. She is constantly organizing staff, checking to see the napkins are the right color, and that the correct wine is ordered, delivered, and chilled. Customers love the level of personal service that Stephanie provides to them every step of the way. Stephanie is proud to be part of the partnership that makes Catering Peoria synonymous with excellence.

Mike Van Raalte, Head Chef/Proprietor
Mike Van Raalte is a master in the kitchen. He has been in the food industry for over 35 years and has experience in all areas of the kitchen, from dishwasher to head chef. People far and wide have taken notice of his fantastic award-winning recipes. Mike won a Gold Medal in Cold Food Buffet from the Oklahoma Hotel Motel Association and a Bronze Medal in Cold Food Display from the Illinois Restaurant Association. He is also a Certified De Cuisine and Certified Food and Beverage Executive. He brings his years of experience to each and every one of Catering Peoria’s dishes.
